Unsweetened Chocolate is the chocolate liquor cooled and formed into a bar. It is used primarily for cooking or baking.
Cocoa Butter is the fat extracted from the chocolate liquor.
Cocoa Powder or Cocoa Solid is what is left after the cocoa butter is removed from the liquor. It usually undergoes “Dutch process” that neutralizes its natural acidity.
Bittersweet Chocolate contains at least 50% chocolate liquor.
Flavored Chocolate. As its name implies, it is flavored with fruits, coffee or rum.
Filled Chocolate. Possibilities for this kind of chocolate are endless, but the popular ones are those filled with nuts, honey, caramel and milk.
Semi-sweet chocolate is also used primarily in recipes. It has extra cocoa butter and sugar added. Sweet cooking chocolate is basically the same, with more sugar for taste.
Decorator's chocolate or confectioner's chocolate isn't really chocolate at all, but a sort of chocolate flavored candy used for things such as covering strawberries. It was created to melt easily and harden quickly, but it isn't chocolate. If you want quick and easy, use decorator's chocolate. If you want the real thing, use real chocolate and patience.
Chocolate Liquor This is the pure, straight-from-the-bean chocolate. The center of the cocoa bean is ground into a liquid, called the liquor (there is NO alcohol in this!).
Chocolate extract is a good way to add chocolate flavor to your cooking without adding fat, but the flavor can be a bit strong. It is made like vanilla extract; cacao beans are soaked in alcohol.

Unsweetened Chocolate is the chocolate liquor cooled and formed into a bar. It is used primarily for cooking or baking.
ReplyDeleteCocoa Butter is the fat extracted from the chocolate liquor.
Cocoa Powder or Cocoa Solid is what is left after the cocoa butter is removed from the liquor. It usually undergoes “Dutch process” that neutralizes its natural acidity.
Bittersweet Chocolate contains at least 50% chocolate liquor.
Flavored Chocolate. As its name implies, it is flavored with fruits, coffee or rum.
Filled Chocolate. Possibilities for this kind of chocolate are endless, but the popular ones are those filled with nuts, honey, caramel and milk.
Semi-sweet chocolate is also used primarily in recipes. It has
extra cocoa butter and sugar added. Sweet cooking chocolate is basically
the same, with more sugar for taste.
Decorator's chocolate or confectioner's chocolate isn't really
chocolate at all, but a sort of chocolate flavored candy used for things
such as covering strawberries. It was created to melt easily and harden
quickly, but it isn't chocolate. If you want quick and easy, use
decorator's chocolate. If you want the real thing, use real chocolate
and patience.
Chocolate Liquor
This is the pure, straight-from-the-bean chocolate. The center of the cocoa bean is ground into a liquid, called the liquor (there is NO alcohol in this!).
Chocolate extract is a good way to add chocolate flavor to your cooking without adding fat, but the flavor can be a bit strong. It is made like vanilla extract; cacao beans are soaked in alcohol.
